WINEMAKING / MATURATION
Grapes were hand-picked from a single 13 year old vineyard planted on alluvial soil. The grapes were picked in the morning, cooled overnight in a cold room and then crushed, destemmed and pressed the following day. The juice was settled overnight then racked to barrels for spontaneous/wild fermentation. The barrels were rolled once per week to stir up the lees. In total 20% of the wine was created in new oak barrels and 80% was matured in older fill barrels. After 10 months in both 225l and 300l oak barrels the wine was racked to tanks, fined and filtered.
The wine showcases a lovely lemon yellow in the glass. On the nose aromas of refreshing lime and lemon zest as well as star anise and a hint of clove. The palate gives way to invigorating notes of melon, kiwi, green apples and white peaches. The wine has a wonderful mouth feel with the acidity being in fantastic balance with the fruit, which leads to a fantastic length on the finish.
While winter had a late start, it was characterized by good rainfall, leading to an even bud break. A turbulent start to flowering season improved towards the onset of summer. Warmer weather in November contributed to even vineyard growth. A moderate January and February was followed by an initially hot February, while cool and wet conditions dominated from the end of February through March, creating challenging harvest conditions. Despite the wetter than ideal conditions, our microclimate allowed the grapes to achieve ideal ripeness.
