Ricard is the number one pastis in the world, a long-time favourite in France, and the 4th largest spirit in the world. It is sold in 150 countries. The original recipe has been unaltered since its creation by Paul Ricard in 1932. The principal ingredient of Ricard is star anise, a rare spice that grows near the southern Chinese border and in the north of Vietnam. Others include liquorice from Syria and aromatic herbs from Provence.Swiss-born Henri-Louis Pernod established a distillery at Pontarlier in eastern France in 1805, forming Absinthe Pernod Fils. In 1926, La Maison Pernod Fils merged with Distillerie Hémard, and Pernod Père et Fils. The new organisation was named Établissements Pernod, which became Pernod SA in 1959. Meanwhile in Marseille in the 1930s, Paul Ricard, the wine merchant’s son, dreamt of finding a formula “that would meet everyone’s tastes”. In 1932, he finally had his recipe, declaring “It shall be called Ricard, the real pastis from Marseille!”The tasting note offers a creamy soft and smooth, caramel and chocolate butterkist feel. However, on the nose, Ricard discloses aromas of caramel and sultanas that have been soaked overnight.Ricard should be served cold and prepared by adding chilled water to 20 ml of Ricard and then adding the ice cubes last. This ritual will release the full aroma of the anise. The unique recipe makes for an ideal combination with cordials (like pomegranate, mint, orgeat, or grapefruit) or fruit juices (mango, strawberry, cranberry).
